It’s that time again! Time for the monthly Global Feasts series! Each month, I prepare a feast inspired by a different country. The idea is to begin with the letter A and move down the alphabet. This month, the letter C brought us Global Feasts: Colombia!

You guys, this feast was my favorite so far! So much vibrance, color, and tropical inspiration. Although Colombian cuisine has a heavy focus on meats and fried foods, I tried to keep things light, while still creating authentic dishes.

You know, although I’ve never been to Colombia, I have been to a Colombian family gathering here in the US. One of my best friends is half Colombian, and his family had a party the night before a wedding. It was SUCH a freakin blast. Aguardiente shots every few minutes, festive music, salsa dancing, and of course, family. The type of family that loves loves loves spending time together. A culture and way of life that I find so refreshing and appealing.
