Let’s cure that NYE hangover you’re going to have, shall we?
Dudes. This is the ultimate peanut butter and jelly right here. Va-va-va-voom peanut butter and jelly. BARBIZON MODEL peanut butter and jelly! You know it’s good when I compare it to a barbizon model.
This sandwich originally started as a semi-healthy jazzed up toast breakfast. With apple slices and peanut butter. BUTTTT…. I went a little overboard and made a totally slutty lunch instead. Tis the season! Still! Right?!
See that up there? That’s me, trying to add pomegranate seeds to freakin everything. How does one use up all the seeds!? I always struggle with it, so I made some “crunchy jam.” May be the best thing ever. I’m hooked. What else can I add pomegranate seeds to? Hmmmm…. cereal? Check. Champagne lava lamp? Nope. Didn’t work on that one.
Alright…. back to this hangover you KNOW you will have come January 1st. Doesn’t that kind of blow? Always having a hangover on the first day of the year? The first day of your new life. The first day of the rest of your life. Day one of the 365 you have committed to being the BEST EVER! Yeah, it blows. But we just can’t resist all that bubbly on NYE amiright? Right.
- 4 slices peppered bacon
- 2 Tablespoons heaping raspberry jelly
- 1/4 cup pomegranate seeds
- 2 Tablespoons heaping crunchy peanut butter
- 1 small fuji apple cored and sliced
- 4 slices french bread
- 2 Tablespoons soft butter
Preheat your oven to 400 degrees F.
Line a cast iron skillet with bacon slices and bake for 25-30 minutes, or until cooked through, flipping once. Remove from skillet and let cool on a paper towel.
Meanwhile, combine jelly and pomegranate seeds.
When bacon is cooked, heat a nonstick skillet over medium heat.
Spread butter evenly on one side of each bread slice. On the opposite side of the butter, spread jelly mixture on 2 of the slices, and peanut butter on the other 2.
Place a layer of apple slices on top of jelly, then bacon, then top with remaining bread, peanut butter side down.
Place both sandwiches in the heated skillet and cook until bread is browned, about 4 minutes. Flip and cook the other side until browned.
