Ingredients
3mediumgolden beets, peeled and diced into ½" cubes
1-2cupscold water
½cupplain full fat yogurt, I used Nancy's Organic
1sprigfresh tarragon, leaves removed and stem discarded
Instructions
Place the beets in a medium saucepan. Cover with water until beets are submerged by 1". Bring to a boil. Reduce heat and simmer 15 minutes, or until beets are very tender. Strain and let cool slightly, about 5 minutes.
Place the beets, yogurt, and tarragon into a blender or food processor. Puree until smooth.
Store in the fridge for up to 3 days, or freeze into small servings for up to 1 month.
