Vegan tacos for the beer lovers
Um.. did you read that these tacos are marinated in BEER? Just didn't want you to miss that, LOL!
I love this quote from Jacquelyn in the book: "If anyone ever tells you they could never eat vegan food, your mission is clear. Sit them down, serve them a beer, and feed them as many of these tacos as they can stuff in their face. Because that's what they'll do with these tacos: stuff them in their face by the fistful, unable to argue about anything."
There is so much flavor in the beer marinated sweet potatoes, that you can keep the toppings super simple. Some corn (charred if you like), onion, cilantro, avocado, and some hot sauce. Maybe a good squeeze of fresh lime. So good.

Lush: A Season by Season Celebration of Craft Beer and Produce
Just the title of this book is intriguing, isn't it? I mean, what could be more rad than vegetarian cooking through the seasons with beer? Lush is a cookbook by Jacquelyn Dodd from The Beeroness (maybe my new hero).
LOVE IT.
Lush starts off with an absolutely stunning cover highlighting seasonal produce and delicious looking dishes. When you open the book you are blown away by more gorgeous photography and some chapters on tips for pantry staples and using beer as an ingredient in your cooking.
"This book is for everyone. I don't want it to be seen as something exclusive to those who abstain from meat altogether. Good food is good food - and that's what I want to offer the world." - Jacquelyn Dodd
The book continues through the seasons with a produce guide and beer guide at the beginning of each.
Here are some recipes that I'll be making ASAP:
- Beer braised artichokes wrapped in puff pastry
- Kale panzanella with toasted beer bread
- Bing cherry and hefeweizen farro salad
- Fried beer-battered tomatillo and mozzarella sliders
- Honey, Belgian dubbel, and wild mushroom banh mi
This is possibly the most exciting cookbook on my shelf right now (my husband sure thinks so) and I can't wait to try out all the recipes!

What kind of beer do I use?
The recipe specifies a "winter ale," which is described as:
"Although the idea of a winter ale varies wildly from brewery to brewery, there are some common themes. Most often, beer that has been designated a winter ale falls into the category of a strong ale (aka old ale). However, they can also include anything from an IPA to a stout. Winter warmers are generally higher in ABV, have strong malt profiles, range from dark amber to inky black, and frequently contain spices such as cinnamon, nutmeg, or cloves. Their carbonation levels tend to be lower, too."
We used Jubelale from Deschutes Brewery, which we found at Kroger, but I have also seen it at Costco.
What toppings go well with sweet potato tacos?
Pretty much any of your fave taco toppings! We liked corn, avocado, chopped onion, fresh cilantro, and some hot sauce with a squeeze of lime. Some pickled jalapenos would be fantastic too!
If you're not vegan, you could add shredded cheese and sour cream!

Winter ale roasted sweet potato tacos
Ingredients
- 2 large garnet sweet potatoes, cut into ½" thick wedges
- 1 tablespoon + 1 teaspoon kosher salt, divided
- 1 ½ cups winter ale
- 2 tablespoon extra virgin olive oil
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon freshly ground black pepper
- 12 small corn tortillas
- 1 cup frozen corn kernels, thawed
- 1 medium avocado, peeled, pitted, and diced
- ½ medium white onion, chopped
- ¼ cup chopped fresh cilantro leaves
- hot pepper sauce for serving
Instructions
- Put the sweet potato wedges in a large, shallow bowl. Sprinkle 1 tablespoon of the salt over them and add the beer. Add enough water to fully submerge the potato wedges. Cover the bowl and refrigerate for at least 3 hours and up to 12 hours.
- Position a rack in the top third of the oven. Place a rimmed baking sheet on the rack. Preheat the oven to 425°F.
- Drain the potatoes and rinse well. Pat them dry with paper towels, removing as much moisture as possible to help them crisp. Transfer them to a large bowl. Add the olive oil, onion powder, garlic powder, pepper, and remaining 1 teaspoon of salt and toss to coat.
- Transfer the potatoes to the preheated baking sheet and spread them out in a single layer. Bake for 15 minutes. Flip the potatoes over and bake for an additional 10 minutes or until the undersides are golden brown. Remove the potatoes from the oven and transfer to paper towels to drain.
- Top each tortilla with 2 or 3 sweet potato wedges and some of the corn, avocado, onion, cilantro, and hot sauce. Serve.

I have to get this cookbook! My husband loves beer and he thinks it's the coolest thing in the world when I cook with it. These tacos look particularly amazing -- and I love that they're marinated in winter ale. Does the flavor of the ale come out in the flavor or is it more of a back note? Wonder if you could do some kind of beer reduction sauce to drizzle on top. HEAVEN!
