Oh HEY SUMMER! WOOOOT!

Guys, it’s time for another round of #TheRecipeRedux. That awesome monthly post where healthy food bloggers and I get together and share recipes based around a theme. This month? Blogger recipe revamp!

I decided to try out the apricot pineapple chicken salad recipe from Nutritioulicious. I absolutely loved the idea of adding Summer fruit to a chicken salad!

So…. the revamp. I decided to go full on vegetarian with this one and replace the chicken with chickpeas. I’m also trying to avoid really sugary fruits, so skipped the pineapple. Throw in some fresh herbs, and you’ve got some delicious apricot chickpea salad sandwiches! YUM!

This sandwich is SO easy to make, you guys. Just toss ingredients together and place in between some bread. There you go. A meal in just 10 minutes!

I really love how the yogurt and apricot compliment each other. Make sure to use ripe, but not mushy apricots, so they aren’t too tart or soft!

Apricot chickpea salad sandwiches! A fruity, vegetarian spin on the classic chicken salad sandwich recipe. DELICIOUS!
Servings: 4 sandwiches
Ingredients
  • 1 can chickpeas rinsed and patted dry, 15oz
  • 3 apricots diced
  • 1/3 cup full fat plain yogurt
  • 1 Tbsp minced chives
  • 1 Tbsp minced dill
  • 2 Tbsp raw pine nuts
  • Salt and pepper
  • 8 slices bread
Instructions
  1. Combine all ingredients through pine nuts in a medium sized bowl. Stir to combine well. Season generously with salt and pepper.
  2. Divide chickpea salad amongst bread to make 4 sandwiches.
  3. Enjoy!

    That sandwich looks fantastic. I happen to have a can of chickpeas sitting here waiting to be roasted but I think I’ll try this sandwich instead!
