An easy weeknight meal
It only takes 20 minutes to make these broccoli quesadillas! Just sauté up some broccoli with some spices, add it to a tortilla with some cheese and then heat that until your quesadilla is golden and crispy and melty.
Definitely easy enough for a weeknight, right?
Pro tip: If you wanted to prep this ahead of time and make it extra speedy, cook the broccoli and grate the cheese ahead of time. It would only take about 10 minutes to build these quesadillas and get them cooked!

Mexican spiced broccoli
We sauté some finely chopped broccoli for these quesadillas along with our own Mexican spice blend:
- chile powder
- cumin
- coriander
- onion powder
- garlic powder
- salt and pepper

The cheese
We like sharp cheddar for these broccoli quesadillas (Tillamook is our fave)! Broccoli and cheddar go together so well, and the classic pairing works well here too. Oh hello, broccoli cheddar soup!
If you don't have sharp cheddar, you can use medium cheddar, colby-jack, or even a Mexican shredded cheese blend if that's what you have.

Recipe options
- Add protein: Add some pinto beans or black beans to the quesadillas for an extra boost of protein. Or try adding some of these taco meat substitutes to your quesadilla.
- Switch up the spices: Feel free to use your own taco seasoning blend if you have one that you love!
- Use corn tortillas: A great option! Corn tortillas will not fold as well, so I recommend making quesadillas with whole tortillas on the top and bottom like a sandwich.
- Make it spicy: Add some jalapeno or hot sauce to your quesadilla for a spicy kick.

Recipe
20-minute cheddar broccoli quesadillas
Ingredients
- 2 Tbsp + 1 tsp vegetable oil or canola oil
- 3 cups finely chopped broccoli florets
- 4 teaspoon chile powder
- 2 teaspoon ground cumin
- 2 teaspoon ground coriander
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt and pepper
- 2 cups grated sharp cheddar cheese
- 4 large flour tortillas
- avocado, salsa, sour cream, or other toppings for serving
Instructions
- Heat 2Tbsp of the oil over medium high heat in a large skillet. Add the broccoli, chile powder, cumin, coriander, onion powder, and garlic powder and stir to combine. Cook, stirring occasionally, until the broccoli is tender, about 7 minutes. Season with salt and pepper to taste. Remove from the pan and set aside.
- Meanwhile, build your quesadillas. Add ⅛ of the cheese to one half side of a large tortilla as shown in the photos above. Top with ¼ of the broccoli and another ⅛ of the cheese and fold the tortilla over to create a half moon. Repeat with the remaining 3 tortillas, cheese, and broccoli.
- Wipe out the pan with a paper towel and reduce the heat to medium low. Heat the remaining 1 teaspoon of the oil and swirl to coat the pan.
- Add 2 of the quesadillas to the pan if you can fit them (if not, do one at a time). Cover and cook over low heat for about 2 minutes or until golden. Carefully flip and cook for another minute until both sides are golden and the cheese is melted. Repeat with remaining quesadillas.
- Serve with avocado, salsa, sour cream, or any other quesadilla toppings of your choice!
