Remember back in college when you could down Irish car bombs like a friggin champ? Well, I do (ahem, sort of, heh heh). Irish car bombs used to my thang. USED to be is the key here.

Seriously, friends. A few glasses of wine these days and I'm spent. That college girl would scoff at me BIGLY!
Those awesome Irish car bombs though. They are sooooo tasty. A shot of Bailey's Irish cream and Irish whiskey, dropped into a pint of Guinness and chugged chugged chugged until the shot was taken at the bottom. YUM. And totally badass.
So, I did what any mid-thirties trendy homemaker would do. I turned that fave cocktail into some boozy popsicles. Oh yes. Creamy, dreamy, delicious CHOCOLATE Irish car bomb pops.
So, these days, St. Patrick's day drinkin is a thing of the past. Yeah, I might have a Guinness to be festive and show I still have some spunk left in me. But, hangovers just can't be a part of my life since having Rhubarbaby. Oh my gosh, could you imagine? ACK! No. Nonononono.
Boozy pops though? I'll never give these up. Especially covered in chocolate drizzle! Huzzah! Not quite enough booze to get you loaded, but just enough to taste like you will. Heh. You're welcome.
Top it off with a red wine chocolate shake and you're golden. TREATYOSELF!

Guinness, Bailey’s Irish cream, and Irish whiskey blended with chocolate and frozen into a creamy, smooth popsicle. These creamy, chocolate Irish car bomb pops are the perfect St. Patrick’s day dessert!
- 2 cups heavy whipping cream, divided
- 1/2 cup chocolate syrup (like Hershey's)
- 1/4 cup Irish cream liqueur (like Bailey's)
- 1/4 cup Guinness draught
- 1 oz Irish whiskey
- additional chocolate syrup for drizzling (optional)

In a blender, blend 1 cup of the whipping cream on high until thick, about 20 seconds. Add the next 4 ingredients, through whiskey, as well as the additional cup of whipping cream and blend again until thick, another 20 seconds.

Spoon the mixture evenly into the popsicle molds. Be sure to stir the mixture in the molds, as air pockets form easily. Freeze for 30 minutes, then add popsicle sticks. Freeze at least 8 hours or overnight.

Be very careful when removing these from the molds. They will be very soft and break easily. Running the molds a bit under hot water helps. Store in an airtight container in the freezer for up to 2 weeks for the best quality.
