    Happy Saturday guys. Ready for a cocktail? A DANISH inspired cocktail? A "It's finally freakin sunny OMG IT'S FINALLY FREAKIN SUNNY" Danish inspired cocktail? I thought so. This Danish aquavit mule right here....... this one's for you.

    Any of you tried akvavit before? The Scandinavian aquavit that's kind of herby? I hadn't, but now I have! It's usually infused with dill or caraway, so it's bright and refreshing, but savory at the same time. It was definitely the most surprising aspect of Global Feasts: Denmark. We tried a local aquavit that was distilled in Seattle, as I couldn't find any that was actually distilled in Denmark. So, the tradition goes that you cheers all of your comrades, make eye contact, and say "skal" (which sounds like skull), then take a shot. A glass of beer is served with the shot!

    I know, I know. I was totally lame and made a cocktail instead. {slaps forehead}

    So, know what I did on my trip through the Southwest US? DRINK MYSELF STUPID! No joke guys. That's what I did. Somehow San Francisco ended up being a massive drink fest. Bloody marys with breakfast, happy hours after lunch, bottles of wine with dinner, then night caps. Then, Napa and Sonoma, and more San Fran bar hopping the next day. We managed about a day and a half of taking it easy in Yosemite, but then VEGAS! By that time, Jared and I were feeling pretty under the weather. We are total morons amiright? We made ourselves sick! Egads. Well......... we drank anyways....... we hit the town and didn't stop. No wonder I've been so foggy brained this week!

    So.......... I need to remember that I'm not 21 anymore. Not even close!

    A Danish spin on the Moscow Mule! This Danish aquavit mule is bright and refreshing, with a savory kick. The herby aquavit and fresh lemon take the classic up a notch!
    Serves: 1 cocktail
    INGREDIENTS
    • Ice
    • 2 shots Danish aquavit
    • 6 oz ginger beer
    • ¼ of a lemon, juiced
    INSTRUCTIONS
    1. Fill a copper mug with ice and top with remaining ingredients. Stir well and garnish with a lemon wedge.

    "SKAL!" Now drink up friends.

      Trish,
      I happen to have a bottle of aquavit in my freezer--my brother brought it over at Christmastime, along with an assortment of herring, so we could start off our Christmas Eve smorgasbord eating fish and chasing the herring with a shot. Skøl pa fiske!
      Thanks for an idea how to drink the rest of the bottle in the meantime!

      ooh, this sounds incredible - I love the herby flavor, and mixed with ginger beer and lemon? YES please! (along with one of those popsicles...) 😉
