    Happy Spring, Rhubarbarians! Are you ready for an amazing cocktail with strawberry AND grapefruit? This strawberry mojito is SOOOOO KILLER.. in a good way. ?

    We are finally getting some sunshine here in the Inland Northwest and it makes me want to sip on ALL the citrus and berry cocktails. Make a few, chill on the porch with the sunnies on, watch the kiddo play in the sunshine, repeat. Best life ever, eh? A girl can dream, right?

    Minty strawberry mojitos are magic

    There's just something MAGIC about citrus, strawberries, and mint together. Bright and refreshing, herby, and sweet but not too sweet. YESSSSSS! Everything you want in a cocktail.

    These strawberry mojitos are made with grapefruit rather than lime, so you get that extra pop of flavor that sends these over the moon.

    How to make a mojito with strawberries and grapefruit

    A traditional mojito is made by muddling lime, mint, and sugar, then topping with rum and club soda. This strawberry mojito is very similar, but we replace the lime with grapefruit and add fresh strawberries.

    First, add some fresh mint, sugar, sliced strawberries, and a large slice of grapefruit to your cocktail glass. Muddle gently, trying to avoid the grapefruit peel, until the sugar is dissolved.

    Fill your glass with ice and add the rum and grapefruit juice. Top with a splash of club soda and stir together. Garnish with strawberry and grapefruit slices and mint leaves.

    Make it a mocktail

    This is delicious as a mocktail! All you need to do is leave out the rum. You can either add more grapefruit juice OR more club soda to fill your glass, whichever you prefer. Cheers!

    How to make a pitcher of strawberry mojito

    It's easy to make a large batch pitcher of these grapefruit strawberry mojitos! Some things to note:

    1. Freshly squeezed grapefruit juice is best, but you could also use store bought. Check the added sugar in the juice and if there is a lot, you could reduce or even omit the sugar in the recipe. This cocktail isn't very sweet though, so you still may like the added sugar.
    2. Mojitos are best served immediately, so you don't want to make these ahead of time. Make a large batch in a pitcher and serve right away.

    Ingredients
      

    • 10 medium fresh mint leaves
    • 1 teaspoon sugar
    • 1 medium strawberry, thinly sliced
    • 1 ½" slice of grapefruit, cut in half
    • ice
    • 2 oz white or silver rum
    • 4 oz freshly squeezed grapefruit juice
    • 2 oz club soda
    • sliced strawberry, sliced grapefruit, and mint leaves for garnish (optional)

    Instructions
     

    • Add the mint leaves, sugar, strawberry slices, and grapefruit slices to a large cocktail glass. Muddle, avoiding the pith of the grapefruit, until the sugar is dissolved.
    • Fill your glass with ice. Add the rum and the grapefruit juice then top with club soda to fill the glass (you may not need the full 2oz). Gently stir, keeping the muddled ingredients below the ice.
    • Garnish with sliced strawberries, sliced grapefruit, and mint leaves. Serve immediately. Enjoy!

    Notes

    I like ruby grapefruits for cocktails because they are sweeter than other grapefruits.

      These gorgeous photos are making me want to reach right into the screen and grab a mojito! Love the flower garnishes, and the combination of grapefruit and strawberry sounds SO refreshing. I'm longing for the warmer weather, and a drink like this is exactly where my mind wants to be right now!

      I love the drink, and I love the way you garnished it! So bright and cheerful and spring-y. I don't make many rum cocktails but I think I might need to rethink that, as the flavours are so lovely in combination here. I don't know that I've seen strawberry and grapefruit mixed together all that often but it seems like a great idea now that I see it. Cheers!

      I love mojitos! They are so easy to make and just perfect for a crowd. This grapefruit and strawberry mojito looks like spring in a glass, and I can't wait to make it now that the temperature is finally up to 60. I can definitely see myself sipping it outside!

      I could definitely knock back a couple of these cocktails. I love grapefruit in cocktails and I've never combined it with strawberries but as you say it sounds killer!
