Not only are these Instant Pot baby potatoes quick (ahem... only 25 minutes), they are super easy! Just place your potatoes in the pot and let them cook to perfection. Make the herb garlic butter in the same pot and toss to coat. That's it!
The Instant Pot steams the potatoes perfectly because the pressure cooks all of them evenly. No more worrying about how hard the water is boiling on the stove top. Yay!

What are baby potatoes?
Baby potatoes, also known as new potatoes or creamer potatoes, are potatoes that are dug up from the ground when are still quite small.
They have a milder flavor than mature potatoes and the skin is very tender so there's no need to peel them.

Make it vegan

Cooking times
Cooking times will vary slightly depending on how soft you like your potatoes or how large your baby potatoes are.
We set the cook time in the Instant Pot for 2 minutes, which yields a fork-tender potato that still holds its shape and skin well.
For slightly softer potatoes, set the cook time to 4 minutes.
For very soft baby potatoes that you can mash after cooking, set the cook time to 4 minutes and then let the pressure naturally release for 5 minutes before manually releasing the remaining pressure.

FAQs
- Can I use other potato varieties? YES! You can use any potato that is cut into bite sized pieces.
- Why are my potatoes still hard? If your potatoes are very large, you may need to increase the cook time by 1 minute or cut them in half. Make sure your potatoes are bit sized.
- Can I peel them? Yep. But it's not easy to peel a raw baby potato. Try peeling them after they are cooked, but before you toss them in the herb garlic butter.

Recipe

Instant Pot baby potatoes with herb garlic butter recipe! These garlic herb potatoes only take 25 minutes from start to finish in the Instant Pot and are an easy side dish for the whole family.
- 1 1/2 cups vegetable broth or water
- 3 lbs baby potatoes, washed well
- 3 Tbsp butter
- 1/4 tsp garlic powder
- 2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp ground pepper

Add the vegetable broth or water to the Instant Pot. Insert the steamer basket or trivet. Add the potatoes and close the lid. Set the sealing valve to sealing. Pressure cook on high for 2 minutes (see notes about cook times above).

When the timer goes off, manually release the pressure with the sealing valve. Carefully open the lid and remove the potatoes using the steamer basket or trivet and set aside. Discard the liquid from the pot and return the pot to the Instant Pot.

Press the saute function to medium. Melt the butter and stir in the garlic powder, Italian seasoning, salt, and pepper. Add the potatoes and gently stir to coat the potatoes with the herb garlic butter. Taste and add more salt and/or pepper if desired.
Cook time is the total time including the time for the Instant Pot to come to pressure. It takes 16 minutes for my Instant Pot to come to pressure.
