Hey dudes! Are you excited to see cocktails back to the blog?? This is my first alcoholic post since I got preggers with little Rhubarbaby. So about a year at this point. Um..... let's just say.... I'm ready. Ready for all this boozy goodness.
In true Rhubarbarians fashion, I just COULDN'T keep it simple. I just HAD to get all cray and make some fancy (but super simple) mulled juice to mix with this boozy goodness. And of course, it couldn't be your run of the mill apple cider. Nope. Nope.
This cocktail is made with MULLED PINEAPPLE CIDER! I ended up cooling the cider before mixing with rum, but this would be soooo delicious as a cozy, warm, slightly tropical-esque rum cocktail. Oh yes.
I'm not much of a rum drinker, but something about Caribbean inspired cocktails just NEEDS rum. Know what I mean? This cold weather cocktail though.... it's kind of like something you'd want to drink in Hawaii... with red and orange leaves falling around you. Does that make sense? Hmm.... probably not. But you get the idea I bet. Fall/Winter cocktail meets tropical. Mmmmm.....

I ended up finding some Bulleit Bourbon 10 year reserve that I just HAD to try. And it is goooood. A little water is all that stuff needs! Or, get fancy and make yourself a blackberry old fashioned.
Recipe
Pineapple cider rum cocktail
Ingredients
- 46 oz pineapple juice
- 2 cinnamon sticks
- 12 whole cloves
- 20 allspice berries
- ½ small orange
- ¼ cup toasted coconut flakes
- 1 cup dark spiced rum
Instructions
For the pineapple cider:
- Mix the pineapple juice and next 5 ingredients, through coconut, in a large pot. Heat over high heat until boiling. Reduce heat to medium-low, cover, and simmer 30 minutes. Taste the juice and add more cinnamon if needed, or other spices if desired. Simmer another 15-30 minutes, or until the spice level tastes good to you. Remove from heat. Let cool completely.Strain well through a fine mesh sieve or cheesecloth. Refrigerate at least 1 hour. Stir in the rum.
For the cocktail:
- Fill a lowball or cocktail glass with ice. Add 6 oz of the mixture.Garnish with pineapple slices, orange slices, and cinnamon sticks. (optional)
