Alright…. onto this lemonade. This AWESOME lemonade! That contains zero refined sugar. Zilch.
It’s this roasting lemons mumbo jumbo that make it sweet enough to drink without adding a ton of sweetener. I was instantly captivated by The Kitchn‘s article about how roasting lemons will bring a richer, less sour flavor to your lemonade.
So I tried it out.
You know what? It’s pretty awesome. With the exception of having to turn on your oven in the Summer heat.
Even though I am not a sweet drink lover, I ended up needing some sweetness after all. I found that roasting the lemons in honey gave me just enough sweetness. Still that rich, tart, lemon flavor, but sweet enough to drink without making pucker-lips.
- 6 large lemons scrubbed and halved
- 6 tsp honey
- 1 cup hot water
- 24-32 oz sparkling water depending on how much ice you used
Preheat oven to 375 degrees F.
Rub each lemon half with 1 tsp honey and place cut side down in a roasting pan. Roast for 45 minutes, or until lemons have started to brown a bit.
Remove from heat and let cool until able to handle with your hands.
Squeeze the juice from the lemons and scrape the pulp out into a large bowl. Most of the juice will be in the pan, pour that juice into the bowl with the pulp, scraping any honey from the pan that may not pour. Add the hot water to the juice, and stir together well.
Strain through a fine mesh sieve, pressing to remove any liquid from the pulp. You should have about 1 cup of concentrate.
Refrigerate concentrate until ready to serve.
To serve, fill a large glass with ice. Pour 1/4 cup of lemonade concentrate into the glass and top with 6-8 oz of sparkling water. Enjoy!
I like this lemonade on the tart side, but if you'd like yours a bit sweeter, add a few more Tbsp of honey to the concentrate before straining.
