    Strawberry watermelon caprese salad // Rhubarbarians

    Oh man, where the heck did I go?! It's been like a friggin week since I've posted on the blog! There are some changes a happening chez Rhubarbarians. More on that in a sec. SOOOOO this summer salad guys! Super easy, delicious, fresh, seasonal, and ready in just 10 minutes. This strawberry watermelon caprese salad is great for those mega hot summer nights when some fruit, cheese, and herbs are all you need.

    OK, so yeah. I've been busy. I may have briefly mentioned before (or not?), but Jared and I are moving back to Seattle! The last few weeks have been spent house sitting, dog sitting, looking for places, interviewing for jobs, and packing IN A CITY AN HOUR AWAY! You know what's difficult? Finding time to plan, shop, cook, photograph, edit said photos, write posts, market said posts, answer emails, Pin, blah blah blah blah. Oh my gosh guys, I'm spent. Also, I am currently living alone in an almost empty giant house. ACK! Creeeeeeeeeeepy!

    Things are looking up though! We found a rad place! Aaaaaaand, I found a gig that will allow me to continue on with this here blog without losing my mind! Such good news. We head to a family gathering this weekend, and then to a wedding the weekend after. THEN, moving the u-haul stuff the weekend after and cleaning the following.

    SOOOOOOO, you may notice quite a few less posts going on around these parts. I'm still here though! Don't forget about me!

    Strawberry watermelon caprese salad // Rhubarbarians

    STRAWBERRY WATERMELON CAPRESE SALAD

    Easy and delicious fruity spin on a caprese salad! This strawberry watermelon caprese salad is full of summer produce, and ready in just 10 minutes.
    Serves: 2 servings
    INGREDIENTS
    • 6 Watermelon triangles, about 1" thick
    • 9 Slices fresh mozzarella, about ½" thick
    • 8 Fresh strawberries, hulled and halved
    • ½ Cup torn fresh basil leaves
    • Salt and pepper
    • 1-2 Tablespoons balsamic glace
    INSTRUCTIONS
    1. Arrange watermelon and mozzarella slices on a large plate, overlapping in rows.
    2. Top with strawberries and basil leaves.
    3. Generously season with salt and pepper.
    4. Drizzle balsamic glace over salad.

    So, this recipe is easy enough for me to make with no time and a half empty kitchen! SCORE!

      This looks so delicious! I just made a similar salad with grilled peaches instead of the watermelon. Now I need to try this too!

      Good luck on your move and yay on finding a gig. I know moving is no fun, I moved cross- country a couple years ago and will be on the same boat again soon. So, i'll be job searching and moving a few states north of me... So, not looking to packing and all that fun stuff.
