It's September, it's fall, and it's apple season! The time of year when we crave warm and cozy, cinnamony, apple desserts.
When we put on scarves, drink apple cider hot toddys, and head out to orchards and wonder when we can finally put up those Halloween decorations.
But also, when school is in session and we are busy all the time, and we only have 15 minutes to make ourselves something DELISH. Ya feel me?
Vegan apple crisp for one (or more)
Sometimes, you just want some delicious dessert without having to really bake away in the kitchen, right? This single serve apple crisp is DELICIOUS and is sure to curb that fall dessert craving. Aaaaand it's done in only 15 minutes. Huzzah! Make one (or two), cozy up on that couch, and live your best fall-loving life.
The apples are cooked in the microwave, which is super speedy, while the crisp topping is quickly made in a small pan on the stove top.

30-Minute Frugal Vegan Recipes
This recipe comes from the book 30-Minute Frugal Vegan Recipes by Melissa Copeland. Melissa is the blogger over at The Stingy Vegan and creates cheap recipes that you will LOOOOVE, even if you aren't vegan.
As a busy mother of a 3 year old, quick and easy recipes that don't break the bank are LIFE. This book is loaded with easy and cheap dishes that are all plant based. YESSSSSS.
Mains, pastas, soups, salads, burgers, appetizers, morning munchies, and even treats. It has everything you could want in a vegan cookbook. Each recipe has a large, gorgeous picture to go with it, which we always find helpful with cookbooks too.

How to make a delicious microwave apple crisp
I know what you're thinking: that there's no way an apple crisp is crazy awesome cooked in the microwave. But it definitely is! The trick is to make the crisp topping in a pan on the stove top while the microwave does the brunt of the work.
This individual apple crisp is so easy, you'll wonder where it's been your whole life! Here's what the author, Melissa Copeland, has to say about this recipe:
"There's nothing sadder than a soggy crumble. Unfortunately, that sometimes happens when you bake the crumble right on top of the filling. This recipe takes care of that by toasting the crumble in a pan while the filling is cooking. This single-serving crumble is perfect for those days you're craving something sweet but don't want to make a whole pan."
Here's how you do it:
- Peel and dice your apple. Toss it with sugar, salt, and water and let macerate for a few minutes.
- Meanwhile, make your crisp topping. Just toast everything in a small sauce pan until it's nice and brown and thick!
- Microwave your apple mixture.
- Top the apples with the topping.
- Top with your favorite ice cream. (Optional, but oh sooooo fantastic)
- Enjoy every bit of it. All to yourself.
We used 8oz ceramic rectangular baking dishes that we got as a gift, but these microwave save Le Creuset ones would be perfect!
What kind of apples do I use?
This recipe calls for granny smith apple, which is the traditional apple used for apple crisps, crumbles, pies, etc. I actually used a gala apple when I made it and it was oh so delicious.
Granny smith apples will give you a traditional apple pie flavor, while gala (or fuji or honeycrisp) will be a bit sweeter.
Just be sure to choose an apple that is very crisp so it doesn't turn to mush in the microwave.
Can I double or triple this recipe?
YES! My husband would NOT have been very happy if I made just one of these and refused to share because they are SINGLE SERVE, HELLO.
The filling and topping are easy to double or even triple. Since they are cooked individually in separate ramekins, you can make as many or as few as you'd like.
Just make sure to only cook one at a time in the microwave.

Vegan individual apple crisp

Ingredients
FOR THE FILLING
- 1 medium granny smith apple*
- 1 tablespoon granulated sugar
- 1 tablespoon dark brown sugar
- tiny pinch of salt
- 2 teaspoon water
- ¼ teaspoon ground cinnamon
- 1 teaspoon cornstarch
FOR THE TOPPING
- 2 tablespoon neutral oil or vegan butter
- 3 tablespoon all-purpose flour
- 3 tablespoon rolled oats
- 1 ½ tablespoon dark brown sugar
- ⅛ teaspoon ground cinnamon
- tiny pinch of salt
Instructions
- To begin the filling, core and dice the apple into ⅜" (1-cm) cubes. Put them in a bowl and sprinkle with the granulated and brown sugar, salt, and water. Mix well and set aside to macerate.
- To prepare the crisp topping, put the oil in a small pan; if you're using butter, melt it over low heat. Sprinkle with the remaining crisp topping ingredients and stir until crumbly. Toast, stirring often, over medium-low heat for about 5 minutes, or until golden brown. Transfer to a plate to cool.
- Back to the filling: Sprinkle the cinnamon and cornstarch over the diced apple and mix well. Transfer the apples and all their juice to a microwave-safe ramekin or large mug.
- Microwave on high for 2 to 3 minutes, or until the apples are soft and the syrup is bubbling. Each microwave oven is different, so keep an eye on it. You can stop the microwave and give it a good stir from time to time (mine takes 3 minutes in my 800-watt microwave).
- Remove from the microwave and let cool for a couple of minutes before sprinkling with the crumble topping.
- Serve with a scoop of vegan ice cream (optional).

Of all the fall flavors (pumpkin, pear, cranberry, maple or apple) I think apple is my favorite and honestly there's nothing better than a hot homemade apple crisp. We are empty nesters now, so small batch desserts are the way to go in our house -- I can practically smell the cinnamon now --my husband will love this!
