I am the only non-meat eater in my family, so I know I have found some good recipes when my husband and son love to eat them.

What is Veganuary?
Veganuary is a 31-day challenge to follow a vegan diet and way of life for the entire month of January.

How do I prepare for Veganuary? The biggest tip that I have is to find recipes that you know you will enjoy. If you love tacos, find some taco recipes. If you know you don't like tofu, skip the tofu recipes.
On top of this, choose recipes that fit into your busy schedule. Don't try to cook an elaborate dinner from scratch every night if that's not what you're used to. It's okay if you find a few recipes and make those several times throughout the month. Set yourself up for success!

The dried beans absorb the flavor of the paprika and carry that over to the soup. So, you get a bit of a smoky bite, but it's not overpowering at all!

Delicata squash has thin, deliciously edible skin so there's no need to peel it! Which also means you can eat the entire stuffed squash without having to scoop it out of the skin. The skin becomes very tender, so that all you need is a fork to cut through it.

This cozy pumpkin red lentil soup has become one of our favorites! We keep things very simple with carrots and celery, but this soup is anything but boring. The pumpkin puree makes the soup thick and hearty, while adding a touch of that pumpkin flavor we all love.

My favorite thing about this salad is the crispy chickpeas. They are sauteed with a bit of oil, fresh rosemary, and meyer lemons. The lemon gets a bit blackened and the chickpeas soak up all the flavor. You MIGHT want to double this batch and put some to the side to snack on! They are that good!
