    Hi, Rhubarbarians! Are you participating in Veganuary this year? Whether you're a beginner to vegan cooking or a full-time vegan, here are 31 delicious veganuary recipes to try.

    I am the only non-meat eater in my family, so I know I have found some good recipes when my husband and son love to eat them.

    All of these vegan dinner recipes are tried, true, and enjoyed by my my whole family not just in January, but regularly throughout the year.

    What is Veganuary?

    Veganuary is a 31-day challenge to follow a vegan diet and way of life for the entire month of January.

    "Veganuary is a non-profit organisation that encourages people worldwide to try vegan for January and beyond. During the 2022 campaign, more than 620,000 people took our pledge to try a vegan diet, while more than 1,540 new vegan products and menu options were launched in our key campaign countries." -Who We Are, Veganuary

    How do I prepare for Veganuary? The biggest tip that I have is to find recipes that you know you will enjoy. If you love tacos, find some taco recipes. If you know you don't like tofu, skip the tofu recipes.

    On top of this, choose recipes that fit into your busy schedule. Don't try to cook an elaborate dinner from scratch every night if that's not what you're used to. It's okay if you find a few recipes and make those several times throughout the month. Set yourself up for success!

    Why you'll love these

    All of these easy vegan dinner recipes are made with ingredients that are not hard to find at your grocery store. There aren't any vegan meat alternatives (although if you'd like to add some feel free), and they are all still hearty, filling, and satisfying. Oh, and delicious.

    This soup feels very nostalgic, a lot like the vegetable soup we used to love as kids. But, rather than alphabet shaped pasta, we added fiber loaded navy beans. This one is a soup that the whole family will love!

    13. Smoky black eyed pea soup

    A lot of black eyed pea soups are made with ham, but you don't need it to get that smoky flavor! We get a super smoky flavor without any ham by soaking the beans in smoked sweet paprika. The dried beans absorb the flavor of the paprika and carry that over to the soup. So, you get a bit of a smoky bite, but it's not overpowering at all!

    14. Lentil stuffed delicata squash with cranberries and pecans

    Delicata squash has thin, deliciously edible skin so there's no need to peel it! Which also means you can eat the entire stuffed squash without having to scoop it out of the skin. The skin becomes very tender, so that all you need is a fork to cut through it.

    29. Instant Pot vegan cacciatore with white beans

    This vegan version of chicken cacciatore has all the same flavors that you'd expect from the traditional. Flavor is built by sautéing lots of mushrooms with onions before cooking them in tomato sauce. Then using fresh rosemary, sage, and thyme.     30. 15-minute arugula salad with lemon rosemary chickpeas

    My favorite thing about this salad is the crispy chickpeas. They are sauteed with a bit of oil, fresh rosemary, and meyer lemons. The lemon gets a bit blackened and the chickpeas soak up all the flavor. You MIGHT want to double this batch and put some to the side to snack on! They are that good!
