Quinoa, chickpeas, walnuts, cheese, and grapefruit vinaigrette.... it's all loaded with protein. Which makes this quinoa salad hearty enough to eat as a main dish OR as a healthy side dish.

This salad has EVERYTHING you want if you are a fruit and cheese lover like me. Apples, pears, pomegranate, cheddar, and pecans. Super simple, but super amazing.

This one is LOADED! Roasted squash, roasted broccoli rabe, wilted kale, pepitas, cranberries, and a mustardy vinaigrette. Ooooooh..... yum.

Another 15 minute meal! My favorite thing about this salad is the crispy sauteed chickpeas. They are sauteed with a bit of oil, fresh rosemary, and meyer lemons.

A 20-minute warm winter salad with apples and cheese! We are big fans of salads loaded with fruit and cheese.
8. Watermelon radish salad with orange and goat cheese
Radishes can have a serious bite to them, and eating a whole bowl full can be well... intense. Just a quick 30-minute pickle with some vinegar will mellow out that spiciness and make the radishes really pleasant and mellow but still crunchy.
