    Hello, Rhubarbarians! Let's brighten these short, dark days with some delicious winter salads.

    A lot of people don't think of winter as a salad season, but there are so many seasonal fruits and veggies to enjoy when it's cold. A winter salad can be vibrant and fresh, or warm and comforting.

    These ten winter salad recipes are satisfying, in-season, and filling enough to be a full meal.

    How do you eat salad in the winter?

    Winter is peak season for so much produce! Hearty winter greens, root vegetables, citrus fruits, winter squash, cruciferous vegetables, apples, and pears, etc.

    Tips for building a winter salad that will satisfy:

    • Consider what you're craving. It might be bright and refreshing (citrus), or warm and cozy (root veggies).
    • Choose your produce. Center your salad around the produce you'd like to eat.
    • Choose greens if desired. Winter greens can be quite hearty like kale, collards, and radicchio, so consider massaging the greens.
    • Add protein, fiber, and carbs. Nuts, seeds, legumes, grains, croutons, cheese, and dried fruit are all great options.
    • Add fresh herbs. They add so much flavor. My favorites are tarragon with root vegetables and fresh mint with citrus.
    • Choose your dressing. Citrus dressings are my favorite in the winter, especially this 3-ingredient grapefruit vinaigrette!

    1. Golden beet salad with arugula and goat cheese

    This salad comes together in only 15 minutes! It also uses beet greens that are usually thrown out.

    The warm brussels sprouts marry very well with the flavors of the pecans, cranberries, apples, and blue cheese. Then it all gets tossed in a simple apple cider vinaigrette. Amazing!

    This salad has EVERYTHING you want if you are a fruit and cheese lover like me. Apples, pears, pomegranate, cheddar, and pecans. Super simple, but super amazing.

    Another 15 minute meal! My favorite thing about this salad is the crispy sauteed chickpeas. They are sauteed with a bit of oil, fresh rosemary, and meyer lemons.
