Toasted coconut curry chocolate fudge

Delicious, easy chocolate fudge recipe made with raw cacao powder, toasted coconut, curry, and sea salt.

Ingredients

  • 1/2 cup shredded coconut + more for topping
  • 1/2 cup butter
  • 1/2 cup coconut cream
  • 1 cup raw cacao powder
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon curry powder
  • sea salt

Instructions

  1. Heat the 1/2 cup shredded coconut in a non-stick fry pan over medium-high heat. Toss about every 30 seconds until golden and toasted, about 5 minutes. Set aside.
  2. Place a metal bowl over a saucepan with 1" water. Make sure the bowl does not touch the water. Heat over high heat until boiling and add butter and coconut cream to bowl. Once butter and coconut cream is just melted, remove from heat. Let cool just slightly for about 30 seconds.
  3. Add the cacao powder and stir until combined. If the ingredients begin to separate, wait until liquid cools a bit more.
  4. Stir in cream, sugar, curry powder, and toasted coconut until well blended.
  5. Pour into ice cube molds or into a small parchment lined loaf pan. Sprinkle with sea salt.
  6. Place in fridge for at least 1 hour.
  7. Carefully remove chocolate from molds, or from loaf pan and cut into squares. Top with shredded coconut.
