Instructions
Heat 2Tbsp of the oil over medium high heat in a large skillet. Add the broccoli, chile powder, cumin, coriander, onion powder, and garlic powder and stir to combine. Cook, stirring occasionally, until the broccoli is tender, about 7 minutes. Season with salt and pepper to taste. Remove from the pan and set aside.
Meanwhile, build your quesadillas. Add β of the cheese to one half side of a large tortilla as shown in the photos above. Top with ΒΌ of the broccoli and another β of the cheese and fold the tortilla over to create a half moon. Repeat with the remaining 3 tortillas, cheese, and broccoli.
Wipe out the pan with a paper towel and reduce the heat to medium low. Heat the remaining 1 teaspoon of the oil and swirl to coat the pan.
Add 2 of the quesadillas to the pan if you can fit them (if not, do one at a time). Cover and cook over low heat for about 2 minutes or until golden. Carefully flip and cook for another minute until both sides are golden and the cheese is melted. Repeat with remaining quesadillas.
Serve with avocado, salsa, sour cream, or any other quesadilla toppings of your choice!
