  • 1 large orange sweet potato, the fattest one you can find
  • 1 Tbsp coconut oil
  • 1/2 tsp pumpkin pie spice or cinnamon


  1. Preheat oven to 375° F. Cover a baking sheet with parchment paper (optional for easy clean up). Slice the sweet potato horizontally into 1/2" slices. You should have about 8 slices.

  2. Mix the pumpkin pie spice or cinnamon with the coconut oil and then evenly coat each sweet potato with the oil. Spread evenly on the baking sheet.

  3. Roast for 20 minutes, or until very tender, flipping once halfway through. Let cool slightly, then cut out shapes with your cookie cutters. Enjoy!
