  • 1 1/2 cups vegetable broth or water
  • 3 lbs baby potatoes, washed well
  • 3 Tbsp butter
  • 1/4 tsp garlic powder
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground pepper

  1. Add the vegetable broth or water to the Instant Pot. Insert the steamer basket or trivet. Add the potatoes and close the lid. Set the sealing valve to sealing. Pressure cook on high for 2 minutes (see notes about cook times above).

  2. When the timer goes off, manually release the pressure with the sealing valve. Carefully open the lid and remove the potatoes using the steamer basket or trivet and set aside. Discard the liquid from the pot and return the pot to the Instant Pot.

  3. Press the saute function to medium. Melt the butter and stir in the garlic powder, Italian seasoning, salt, and pepper. Add the potatoes and gently stir to coat the potatoes with the herb garlic butter. Taste and add more salt and/or pepper if desired.
