Heyo, Rhubarbarians! I'm so excited to share this frozen yogurt unicorn bark with you. It's a super fun and exciting recipe from Breakfast, a cookbook by the editors at Extra Crispy. I've been loving the Extra Crispy website, an extension of MyRecipes, so I was thrilled to review their cookbook and share a recipe with you.
This frozen yogurt bark, it's not your average run-of-the-mill yogurt bark. This is UNICORN BARK. Loaded with sweetness, pastel colors, and tons of fun and whimsy. I had such a great time getting Rhubarbaby involved with this unicorn bark recipe. It's so easy, even a 2-year old can make it!
So, it might seem like a stretch to call this yogurt unicorn bark breakfast, (like the time I made pumpkin breakfast popsicles) but it's much more breakfast-y than it looks. It's mainly yogurt and fruity jam, with some white chocolate and sprinkles on top. HUZZAH! Pretty sure this is a little unicorn lover's dream breakfast!

When I opened up this vibrant yellow cookbook, the first thing I noticed is a quote from Winnie the Pooh by A.A. Milne.
"When you wake up in the morning, Pooh, what's the first thing you say to yourself?" -Piglet
"What's for breakfast? What do you say, Piget?" -Pooh
"I say, I wonder what's going to happen exciting today?" -Piglet
"It's the same thing." -Pooh
This breakfast book just..... made me happy. It was like a ray of sunshine from the very first page. It starts with the building blocks of any great breakfast, then goes into fun and humorous articles like "a drawn out and useful hollandaise middle school dance metaphor," and "8 mimosas for summer day drinking." Seriously, my kinda cookbook.

This Breakfast book is one that I could actually sit down and read and have a smile on my fave the whole time. The articles are catchy, hilarious but informative in a really good way, and all about my fave thing ever: food. Breakfast food specifically (duh!). I seriously cannot rave about this cookbook enough.
How to live that yogurt bark life
One of my favorite sections of the book is titled "How to live that yogurt bark life." It's colorful, it's fun, and it's all about how you can eat popsicles for breakfast!
I was immediately drawn to the yogurt unicorn bark recipe because I knew it was one that I could make with Rhubarbaby. All the barks sound DELICIOUS, but this one was one I knew a 2-year old would have a blast with.
Rather than being made with chocolate, this bark is made with yogurt, so is much healthier and perfectly acceptable for breakfast. Right? ??

How to make greek yogurt unicorn bark
As mentioned above, this frozen yogurt unicorn bark is so easy, my 2-year old made it. I helped... a bit. ?
First, gather all your ingredients. This unicorn bark recipe calls for greek vanilla yogurt, 2 kinds of jam, and white chocolate chips. Be sure to choose greek yogurt, or thick full-fat yogurt so it stays creamy while frozen. I added a few different kinds of sprinkles just to give it that extra unicorn love.
Line a baking sheet with parchment paper (trust me on this one) and make sure there is some room in your freezer. Spread the yogurt evenly along the bottom of the pan. Plop some dollops of jam randomly on top and zig zag through with a knife or toothpick to get that jam ripple. Then top with all the white choco chips and sprinkles.
Freeze for several hours, then cut into chunks and enjoy!
Unicorn bark: A fun treat to make with kids!
I have a 7 year old niece who is OBSESSED with unicorns right now and I know she would think this unicorn bark is the most fun recipe ever. The colors, the sweetness, the fact that it's like dessert for breakfast. It's a kiddo's dream food!
To make this super fun for kids, take them to the store with you and let them pick out the toppings to add. Most grocery stores have a giant selection of sprinkles and toppings in the baking aisle. Let them pick out a few different colors and textures of sprinkles! Then let them choose the flavors of jam they would like. I used raspberry and blueberry, but any 2 kinds that are slightly different colors would work. You could even use strawberry yogurt for a pink base!
When you start making the yogurt bark, help them evenly spread the yogurt along the bottom of the pan, and then let them be the chef! You can't really mess up or put too many toppings on unicorn bark!

Recipe
Greek yogurt unicorn bark
Ingredients
- 32 oz Greek vanilla yogurt*
- 4 heaping spoonfuls raspberry jam
- 4 heaping spoonfuls blueberry jam
- ¾ cup white chocolate chips
- pink, purple, and other pastel sprinkles
Instructions
- Line a baking sheet with parchment or wax paper. Pour yogurt and spread evenly along the bottom.
- Place the spoonfuls of jam scattered evenly on top of the yogurt and zig zag with a knife or toothpick to create the jam ripple. Sprinkle on white chocolate chips and sprinkles.
- Freeze for 3 hours or overnight. Remove from the pan and break into pieces. Store in an air tight container in the freezer.

What a fun recipe to make with kids! I love recipes like this where you provide some guidance and then they can go nuts and be all creative. And who wouldn't like to eat some unicorn bark? This would be great as (kid-made) teacher gifts, party nibbles, or as an especially colorful breakfast.

Okay so first of all, these are stunning. They're so colorful and perfectly swirled and decorated! Second, I *love* that they incorporate Greek yogurt! And jams! I'm not big on sugar, but every once in a while I get a hankering for something a little sweet. These are perfect.

What a fun and colorful recipe.This would be great to have around for the grandsons. This would be great as a snack as well as breakfast. I'm a fanatic about eating breakfast. I don't understand people who don't - it gives me get up and go plus I don't get the munchies around ten. When warmer weather comes around I'm making some of this yogurt bark.
