Ingredients

  • 1 large orange sweet potato, the fattest one you can find
  • 1 tablespoon coconut oil
  • ½ teaspoon pumpkin pie spice or cinnamon

Instructions

  • Preheat oven to 375° F. Cover a baking sheet with parchment paper (optional for easy clean up). Slice the sweet potato horizontally into ½" slices. You should have about 8 slices.
  • Mix the pumpkin pie spice or cinnamon with the coconut oil and then evenly coat each sweet potato with the oil. Spread evenly on the baking sheet.
  • Roast for 20 minutes, or until very tender, flipping once halfway through. Let cool slightly, then cut out shapes with your cookie cutters. Enjoy!
