- 2 pieces large rhubarb stalks cut horizontally into 1" . (About 3 cups)
- 3 tablespoon honey
- 2 cups full fat plain yogurt
- Toppings: optional
- Finely diced rhubarb
- Sliced strawberries
- Sliced banana
- Raspberries
- Chopped walnuts
- Chia seeds
Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
Toss the rhubarb pieces with the honey until evenly coated. Spread evenly on the baking sheet and roast for 15 minutes. Let cool slightly.
Blend in a blender with the yogurt until smooth.
Serve in your favorite bowl and top with your favorite toppings!
