Pineapple cider rum cocktail recipe! Pineapple juice is mulled with cinnamon, orange, coconut, and other spices, then chilled and mixed with dark spiced rum. Such an awesome Fall or Winter cocktail!
Mix the pineapple juice and next 5 ingredients, through coconut, in a large pot. Heat over high heat until boiling. Reduce heat to medium-low, cover, and simmer 30 minutes. Taste the juice and add more cinnamon if needed, or other spices if desired. Simmer another 15-30 minutes, or until the spice level tastes good to you. Remove from heat. Let cool completely.Strain well through a fine mesh sieve or cheesecloth. Refrigerate at least 1 hour. Stir in the rum.
For the cocktail:
Fill a lowball or cocktail glass with ice. Add 6 oz of the mixture.Garnish with pineapple slices, orange slices, and cinnamon sticks. (optional)
Notes
This recipes makes about 6 cups of pineapple cider, enough for about 8 cocktails. It is delicious to drink on it's on though.
