    Oh man, I am soooooo ready for spring time smoothies. I love this transition time where winter produce is still hanging around, but spring fruits like strawberries are peeping their faces out. YESSSS! Just so much good stuff right now. This smoothie is totally both wintery AND springy. Meyer lemons, strawberries, and some coconut to give it that tropical, refreshing-ness that we're all big time craving right now.

    The flowers in these photos, they are from a bouquet of flowers Jared got me to lift my spirits a bit. I've been feeling really really down lately. I'm deciding to blame the record breaking amount of gray, rainy days we've had here in Seattle. I think it's also related to Rhubarbaby's current nap schedule that gives me about, oh, 2 whole minutes while he is awake to get out into the world. Then, it's back home to get him fed and put down for a nap. He is still taking 3 per day, and I know I'll look back on this time and WISH he still was, but for now I am dreaming of not being so tied to a baby's schedule.

    Something rad about this recipe: it uses an entire meyer lemon! Seeds, pith, zest, everything. I love how mild meyer lemons are. Almost like little lemony oranges!

    If strawberries are in season (lucky you), then go ahead and use whole fresh strawberries. The tops are edible, and you won't even know they're in there. I do this every spring and summer when I make smoothies. Why just waste those greens? Cha!

    Aaaaaand, the coconut. I WISH WISH WISH I had a Vitamix to blend that shizzz in a little better. My Ninja kicks ass, but it just doesn't puree quite the way I needed it to for this smoothie. I've never been a giant fan of coconut flakes, but if you are, well, this is YOUR drink right here.

    Whole meyer lemon strawberry smoothie with coconut

    Ingredients
      

    • 1 medium meyer lemon, zested and then quartered
    • 3 cups frozen strawberries*
    • ½ cup shredded coconut
    • ¾ cup cold water
    • Optional toppings: meyer lemon slices, shredded coconut, sliced strawberries, edible flowers

    Instructions
     

    • Mix all ingredients, including lemon zest and pieces, in a high powered blender and blend until smooth. Pour into 2 or 3 glasses and top with toppings of your choice (optional).

    Notes

    *If strawberries are in season, then feel free to use fresh instead of frozen. Toss in the whole strawberry, tops and all! Just be sure to add some ice cubes in to get that smoothie texture.

      I adore the fragrance of Meyer lemons and love that this uses entire fruits! I wonder, does it take like a stawberry lemonade? Feeling you in the Ninja and those coconut flakes... ? ? Can't wait to try this!

        Hi Lauren! It actually doesn't taste like strawberry lemonade. The meyer lemon is so mild that it really just tastes like a tropical strawberry smoothie. 🙂
