    Hi, Rhubarbarians!

    Your weekly vegetarian meal plan is here for the week of January 2nd! On the menu this week: grapefruit quinoa salad, red pepper and tomato soup, sweet potato vindaloo, vegan chili cornbread casserole, and tempeh and chickpea sloppy joes. Plus, chickpea chocolate chip cookies for your weekly dessert. YUM!
