    Heirloom tomato toast with olive walnut basil cream cheese // Rhubarbarians

    Whooooooooo doggies that's a long title! So, I am pumped up today. Know why? HEIRLOOM TOMATOES ARE HERE! Well, kind of. They are at least in the organic section of the grocery store already. Not QUITE at the farmer's market, yet. Heirloom tomatoes are one of my favorite summertime eats. And something as simple as heirloom tomato toast with olive walnut basil cream cheese (whew!), is just the perfect Summertime meal.

    So, remember that olive walnut basil cream cheese that you already made? Well, here's a way to use it up! You can do so much more with it than just put it on bagels. It would seriously take a veggie sandwich to the freakin moon. It's that good. Make a creamy pasta. Stuff it in some chicken. Put it in a casserole. Eat it with a spoon.

    Now I'm hearing Cartman saying, "I do what I want!" Oh boy.......

    So, how was your 4th? What did you do? Blow things up? Write your name with sparklers? Coddle your freaked out dog (hand raised!)? Eat some popsicles and delicious grilled food?

    We hung out at the in-law's house with family from out of town. Always a good time over there. A house on the Puget Sound with a nice cool breeze, and some little kiddos being kiddos. Lots of good food, drinks, sleep, veggin, chillaxin. Good times.

    HEIRLOOM TOMATO TOAST WITH OLIVE WALNUT BASIL CREAM CHEESE

    Simple and delicious heirloom tomato toast with olive walnut basil cream cheese. Bright and flavorful, and ready in just 10 minutes. Your new favorite summer meal!
    Serves: 2 toasts
    INGREDIENTS
    • 2 thick slices of rustic bread, toasted
    • Olive walnut basil cream cheese*
    • 2 small heirloom tomatoes, sliced
    • Salt and pepper
    INSTRUCTIONS
    1. Spread a generous layer of cream cheese on each piece of toast. Top with an overlapping layer of sliced tomato. Season with salt and pepper.

      I just read the recipe for the olive walnut basil cream cheese - I can barely contain my excitement to make it AND then pair it with heirloom tomato toast.
