    Sautéed green beans and peas with mint and basil

    Easy 15-minute sautéed green beans recipe! This spring or summer vegetable side dish is a simple green bean and pea saute with a sprinkle of fresh mint and basil. Can be grilled too!

    Hello, Rhubarbarians! We are coming into such a wonderful time of the year where all the fresh, green foods are coming our way. These sautéed green beans really celebrate fresh produce and herbs and it's become a favorite farmers market side dish for spring and summer.

    I love this pea and green bean salad because it comes together in only about 15 minutes, and everyone at the table loves it! It's warm, yet very bright and vibrant. The herbs add so much flavor that you don't need to add anything but salt and pepper!

    How to sauté green beans

    It's so quick and simple to sauté fresh green beans!

    • Wash the beans and trim the sharp ends off.
    • Pat the beans dry so they sauté rather than steam.
    • Heat some oil in a frying pan until nice and hot. Add the beans and cook, stirring occasionally until they are browned and tender, but still al dente. This should take about 10 minutes.

    You can grill them!

    Grilled green beans are super quick and easy too! I recommend getting yourself a nice grill pan for vegetables.

    • Wash the beans and trim the sharp ends off
    • Pat the beans dry so they sauté rather than steam.
    • Toss the beans in the olive oil with a bit of salt and pepper.
    • Grill on a grill pan on your charcoal or gas bbq until browned and tender, but still al dente.

    Using frozen or canned green beans

    • You can use frozen green beans! They will take a bit longer, closer to 15 minutes to cook, but frozen beans are a great option when fresh green beans are out of season or unavailable to you.
    • I wouldn't recommend using canned green beans for this recipe. Canned beans are very soft, and you want tender but al dente green beans after sautéing.

    Ingredients
      

    • 1 tablespoon olive oil
    • ½ lb fresh green beans trimmed
    • ¼ cup fresh or frozen peas thawed if frozen
    • Salt and pepper
    • 2 teaspoon minced fresh mint leaves
    • 1 tablespoon minced fresh basil leaves

    Instructions
     

    • Heat the tablespoon of oil in a non-stick skillet over medium high heat. Add all of the beans and sauté until browned and almost tender, about 8 minutes, stirring occasionally.
    • Add all of the peas, and cook until just tender, about 2 minutes.
    • Remove from heat and season with salt and pepper. Top with all of the mint and basil.
    • Serve immediately.

      I was going to say that you doubled down on the green here, but it's really more tripling down. Beans, and peas, AND herbs? Love it. Fantastic combination of flavours, and a great way to really make them pop with that nice sear from sauteing. You've got me even more eager for all the fresh greens to show up in markets and gardens!

      A simple, seasonal, and refreshing veg side is exactly what I need in my rotation! We're always going for the same ol' roasted broccoli side and though we love it, it's so nice to change things up once in a while. I love the addition of mint in this. Anything cooling is welcome here; NC's summer is no joke!

      I haven't seen this combination before -- green beans and peas. I'm really fascinated by it and dying to try it. I love the addition of the fresh herbs with fresh vegetables. I'm going to the Farmer's Market and pick up this combo. I'm so glad this is fresh veggie season.

      I love green beans, and I'm always trying to find new ways to cook them. I love that you give ideas on how to grill them (total game changer!), and the combination of mint and basil sounds delish. As soon as it stops raining and I can grill again, I'll give these a try!

      Yum, yum! All that green is gorgeous! Do you have a suggested dressing? Or just eat it straight? I hardly ever eat salads straight. I am guessing ranch wouldn't do the trick. 🙂 Maybe a vinaigrette?

        Hi Kate! I don't think this needs a dressing, as the olive oil and herbs are pretty flavorful. You could try adding a touch of lemon juice for a little more zing!
