    Hello, Rhubarbarians!

    Hope you are having a fab summer. Can you believe we are in our last month? Just a few short weeks left and it will be fall. WOWZA!

    We got soooo much zucchini in our CSA this year, and I really struggled to use all of it, honestly. By the time September rolls around, I'll be ready to have something new in my fridge to use, but for now.... it's still all the vegetarian zucchini recipes for you! Today, I'm sharing these quick and easy buffalo chickpea zucchini boats. Zucchini boats are amazingly versatile and a great way to make an impressive meal with what you have on hand in no time at all.

    I took a look back, and it doesn't seem that I have ANY zucchini recipes on Rhubarbarians. Not a single one.. yet! I'm not sure how that's possible since zucchini is a summer staple here in the Northwest. ??‍♀️I end up having to get very creative with them to not get sick of them by the end of the season, so maybe I'm never inspired by zucchini. I just don't know......

    I do have a very old recipe on the blog that these kind of remind of: buffalo chickpea flatbreads. Because anything is awesome on flat bread. Right? The homemade blue cheese dressing from that one would be amazing on these zucchini boats... just sayin. ?

    I'm really dying to try out these stuffed zucchini boats with pine nuts, or these lasagna stuffed zucchini boats. YUMYUMYUM!

    How to make vegetarian chickpea zucchini boats:

    First up: preheat your oven and prepare the zucchini. It's really easy to dig out the inner flesh of the zucchini to make "boats." I just use a small spoon and it's a breeze. Just like prepping a cucumber.

    Next: make your chickpea mixture. Only 3 ingredients! Mix together the chickpeas, butter, and hot sauce. Spoon that into your boats and cook until zucchini is tender.

    Finally: top with all your faves! Ranch dressing, blue cheese dressing, vegan cream sauce, anything that you'd like to use as a creamy, cooling sauce... go for it! Then top with avocado, sliced jalapeno, chives, cilantro, lime slices, anything you'd like!

    Notes about these stuffed zucchini boats:

    1. This recipe uses zucchini, but any summer squash that can be turned into boats will work. Yellow summer squash or eggplant would be amazing.
    2. The cream sauce is really versatile. I kept it simple with ranch, but any sauce that you like to eat with buffalo sauce will work. Try out a vegan cream sauce, try out a garlicky yogurt. I'm a huge fan of this vegan cilantro crema!
    3. Get creative with the toppings. You can add any of your faves here! I like avocado and chives, but you can add anything you would normally add to a spicy dish. Cilantro, lime, cucumber, radish....

    Spicy buffalo chickpea zucchini boats

    Spicy buffalo chickpea zucchini boats recipe! This 30-minute vegetarian dinner is perfect for meatless monday or an easy weeknight meal.

    Ingredients
      

    • 4 large zucchini
    • 1 15.5oz can chickpeas or garbonzo beans, drained, rinsed, and patted dry
    • ½ cup cayenne hot sauce. I used Frank's
    • 2 oz butter, melted
    • salt and pepper
    • For serving: ranch or other creamy dressing, green onion, avocado, red onion, jalapeno slices, lime, cilantro

    Instructions
     

    • Preheat oven to 350 degrees F.
    • Halve the zucchini lengthwise and scoop out the inner flesh to make 4 boats. Place in a baking dish flesh side up.
    • Combine the chickpeas, hot sauce, and butter in a medium sized bowl. Scoop the mixture evenly into the 4 boats. Bake in the oven for 20 minutes, or until zucchini is fork tender.
    • Season with salt and pepper to taste.
    • Drizzle with dressing of your choice, and top with any toppings you'd like. Serve immediately.

    Notes

    I used ranch dressing, but blue cheese or vegan cream sauce would work great too.
