    Your weekly vegetarian meal plan is here for the week of April 24th! On the menu this week: crispy tofu tacos, feta and orzo pasta salad, artichoke and quinoa enchiladas, one pan veggie red curry, and vegan black bean tacos. Plus, salted peanut blondies for your weekly dessert. YUM!

    Vegan/Gluten Free Substitutions: Use gluten free pasta. For a vegan option, use vegan feta and add a pinch of salt.

    Prep Ahead Tip: The quinoa and tomatillo salsa can be prepped ahead of time and stored in the fridge until ready to use.
