    Easy and healthy vegetarian meal plan week 32 plus shopping list! An early to mid August meal plan part of our weekly series.

    Hi, Rhubarbarians!

    Your weekly vegetarian meal plan is here for the week of August 8th! On the menu this week: coconut curry noodle bowls, vegan BLT pitas, black bean quinoa salad, summer salad with brown rice, summer corn and heirloom tomato fettuccine, and vegan chickpea walnut tacos. Plus a delicious healthy cherry crisp for your weekly dessert. YUM!

    Prep Ahead Tip: Actually better if made the day before. Leave the cilantro, avocado, and lime slices for serving.

    Vegan/Gluten Free Substitutions: Omit the queso fresco to make this vegan. Use gluten free pasta to make it gluten free.
