    Hi, Rhubarbarians!

    Sooooo.... have you ever tried roasted radishes? If you haven't, be prepared for your new fave spring side dish.

    Radishes are so much more versatile than you might think. A lot of people have trouble using them in anything other than a salad, but they are so good in so many ways!

    As a raw veggie, they are crunchy with a peppery bite to them. Perfect for salads (obvs), topping on tacos, sliced on a sandwich, or my favorite, eating as a snack with some butter and salt on them.

    But, did you know that roasting them transforms them completely? That peppery crunch turns into a mild, almost sweet roasted veggie. Roasted or braised radishes become soft, but not mushy, and become really mild with amazing flavor. The perfect spring time side dish? Oh yes.

    What does cooked radish taste like?

    You know what? They taste a bit like super flavorful roasted potatoes! Oh yes.

    When you cook radishes, the peppery bite mellows out and makes these root vegetables really pleasant to eat. They become tender, but not mushy, and are incredibly easy to cook.

    In this roasted radishes recipe, we oven roast the radishes in honey butter. Then add a dash of fresh lemon zest and some fresh thyme after bake. Sounds amazing, right?

    How to roast radishes

    Roasted radishes are as easy as roasting any other root veggie!

    • You'll want your oven to preheat at 400 degrees F.
    • Wash, trim and halve the radishes. Then place them in a roasting pan with the melted butter and honey and stir to combine.
    • Roast them for about 30 minutes, tossing once halfway through.
    • Top with lemon zest and fresh thyme. Season with salt and pepper to taste.

    How to use radish greens

    Radish greens are edible! If you have them, add them to the braise to get some greens with your side dish. You can also add them raw to salads, or saute them in a pan for a separate side dish. Or make radish greens pesto! Radish greens don't keep in the fridge for very long, so use them quickly!

    FAQs

    1. What type of radishes should I use? I used Easter egg radishes for this recipe, but this will work with any variety of radish you'd like.
    2. What if my radishes are very large or very small? The cook time will vary depending on the size of your radishes. If you have very large radishes, maybe quarter them to make the cook time a bit faster. Or, if you have tiny radishes, roast them whole!
    3. Can I save the leftovers? Roasted radishes don't make very good leftovers in my opinion. So, eat all the radishes! If you do have some leftover, just store in the refrigerator with the honey butter and reheat in the oven.
    4. Can I eat the radish greens? Radish greens are edible! If you have them, add them to the braise to get some greens with your side dish. You can also add them raw to salads, or saute them in a pan for a separate side dish. Radish greens don't keep in the fridge for very long, so use them quickly!

    Ingredients
      

    • 16 medium Easter egg or red radishes, halved
    • 4 tablespoon butter, melted
    • 2 tablespoon honey
    • 1 teaspoon lemon zest
    • 1 teaspoon fresh thyme leaves
    • salt and pepper

    Instructions
     

    • Preheat oven to 400 degrees F. Place the radishes in a small roasting pan or casserole dish. Stir together the butter and honey until honey dissolves. Pour over the radishes and stir to combine. Roast for 15 minutes. Stir, then roast for an additional 10-15 minutes or until radishes are just fork tender.
    • Remove from oven and evenly sprinkle the lemon and zest and thyme onto the radishes. Season with salt and pepper to taste. Enjoy!

    Notes

    Cook times will vary depending on the size of your radishes. If your radishes are very large, quarter them for faster cooking.
