    Hi, Rhubarbarians!

    Your weekly vegetarian meal plan is here for the week of March 14th! On the menu this week: lemon chickpea orzo soup, enchilada soup, black bean and tofu scramble, vegan power mac and cheese, and crispy teriyaki cauliflower. Plus, chocolate chip almond butter cookies for your weekly dessert. YUM!

    Vegan/Gluten Free Substitutions: To make vegan replace the eggs with ¾ cup of coconut milk. Use gluten-free orzo or rice.

    Vegan/Gluten Free Substitutions: Recipe is gluten free. To make this recipe vegan, substitute vegan cream cheese.
