Bright and springy watermelon radish toast! With whipped orange mascarpone and sweet honey. The perfect farmers market lunch in only 10 minutes!
Is there a SPRING in your step yet?? BAAAAHAHAHAHA! ? See what I did there? Well, here we are, still wintertime and I'm already showing you how to eat fancy teatime appetizers as a legit meal. Totally acceptable, because #springiscoming. Right?
Right.
So, are you at a loss for ideas with those gorgeous watermelon radishes that come around this time of year? I always love using them because they make any meal just look..... beautiful. Bright, colorful, peppery, refreshing. Awesome. But, I feel like I have a hard time coming up with recipes for them.
You could make a winter salad that is sure to brighten your days. Or, make a simple 10 minute lunch straight from the farmers market. Oh yes.
One of my fave things to eat in the spring is radishes with butter and salt. Yep. Just a radish cut in half with a bit of butter on it and a sprinkle of salt. And maybe a cup of tea.
Because doesn't spring just make you think of tea time? Add a slice of lemon cake and it's like, the best meal ever.
I decided to try out mascarpone, that sweet, almost buttery cheese. Desserty, but cheesy. And added a bunch of orange to it to see if I could get a bit more fancy than just spreading a bit of butter on a radish. Um...... score.

So, this recipe really really works if you have super peppery radishes. Be sure to taste your radishes before making this. All that mascarpone and honey will just make this too sweet if your radishes are bland.
Recipe
Watermelon radish toast with orange mascarpone and honey
Ingredients
- 4 thick slices rustic, crusty white bread
- 8 oz mascarpone cheese
- 1 whole orange
- 2 medium watermelon radishes, thinly sliced
- 2 teaspoon honey
- salt and pepper
Instructions
- Start by toasting the bread. While that is toasting, zest the entire orange and squeeze ¼ cup of the juice. Mix with the mascarpone and whip until well combined.
- When the bread is toasted, spread the mascarpone evenly on each piece. Top with the slices of watermelon radish and drizzle ½ teaspoon honey onto each toast. Season each toast with salt and pepper. Serve immediately.
Aaaaaaah sigh. Only how many days till spring?

Those radishes are so beautiful, I would almost hate to eat them! I know they would taste great. I love the combination of honey with the radishes. I will have to give it a try. I am planting some radishes in my garden in the next week or so. I will have to find some watermelon radish seeds and try this!
