    Your weekly vegetarian meal plan is here for the week of March 28th! On the menu this week: easy kale saag paneer, Mediterranean chickpea bowls, loaded vegetarian tortilla soup, lemon chickpea rice soup, and honey garlic chickpeas and vegetables. Plus, no bake chocolate peanut butter bars for your weekly dessert. YUM!

    Prep Ahead Tip: All of the vegetables and greens can be chopped ahead and the paneer can be marinated overnight.

    Vegan/Gluten Free Substitutions:For vegan, substitute tofu for the paneer, coconut milk for the yogurt and cream, and plant based butter. Recipe is gluten free.

    Prep Ahead Tip: No need to prep ahead.

    Vegan/Gluten Free Substitutions: Recipe is gluten free. Skip the feta and use vegan yogurt to make this recipe vegan.

    Prep Ahead Tip: Poblano peppers can be roasted ahead of time.

    Vegan/Gluten Free Substitutions: Recipe is already gluten free. Omit queso fresco to make it vegan.
